The giant of the Amazon,
Known by two names.

In Peru, paiche is a fish unlike any other. One of the largest freshwater fish in the world, it can reach nearly three meters in length, and ranks among the most ancient species of the Amazon. Remarkably, it breathes air at the surface. The communities along its banks have lived alongside it for millennia, and have always given it a singular place in their culture.

Its firm, white, boneless flesh holds a central role in the cuisine of Loreto and Iquitos. It is prepared as ceviche, grilled patarashca-style in bijao leaves, or pan-seared with cocona. In Brazil, where it is known as Pirarucu, it is salted and dried, becoming what many call the cod of the Amazon. Nothing is wasted. The dried tongue serves as a grater, the scales feed local craftsmanship. These practices have been passed down for generations.

It all begins in the Peruvian jungle, near the great Amazonian rivers. There, men and women oversee every stage, from the hatchery to processing, guided by knowledge inherited from their elders. Behind every fillet stands their work and their pride, the pride of an entire region.

This paiche comes from Amazonian Reserve, a Peruvian brand born of responsible, closely managed aquaculture, with no wild harvesting, conceived to protect the species and preserve tradition. paiche is its flagship product. The brand already offers it in new preparations, including a smoked version, and continues to develop other products from Peru. Doncella · Surubim · Pintado

The most prized freshwater catfish,
in South America.

In Peru, it is called the doncella, the lady of the rivers. It is a large Amazonian catfish, with a long and smooth scaleless body, recognizable by its spotted skin, which earns it the name pintado in Brazil, the painted fish. It can exceed one meter in length and ranks among the most prized catches of fishermen in Loreto.

Its white, tender, boneless flesh makes it one of the most coveted fish in all of Amazonia. In Peru, it is cooked in chilcano, that fragrant broth seasoned with mild chili, or simply grilled. In Brazil, in the Pantanal, it is marinated in annatto before being grilled over wood fire, or prepared as moqueca. Everywhere, it wins over those who taste it with its finesse and delicacy.

The Atlantissea doncella grows in controlled waters, in the Peruvian and Brazilian Amazon. Far from the wild fishing that is exhausting the rivers today, it is raised with patience by local teams who have known this fish for generations. Every stage is closely monitored, from birth to the table.

As with paiche, Atlantissea develops its brand alongside its producer, with the goal of bringing it to export markets and international fine dining. The doncella had never before left Amazonia in a form that was fully traceable and compliant with international standards. Atlantissea will build the very first supply chain for it and will be its exclusive importer, starting in 2027. 01 Breeding

Juveniles produced on site. Full control from birth. No wild capture, no external hatcheries. Traceability begins before the fish is one inch long.

02 Harvest

Raised in controlled pond aquaculture in the Peruvian Amazon. Harvested to schedule, monitored for weight and condition at every stage.

03 Production

On-site production under certified standards. Local teams trained to meet international food safety and processing requirements.

04 Filleting & Portioning

Whole fish broken down into fillets and chef-ready portions on-site. Skin-on and skin-off formats prepared to commercial specifications.

05 Cold Chain & Export

IQF frozen at −18°C. Individually vacuum-packed. Full traceability documentation from pond to pallet. Exported under US FDA and FSMA compliance.
