Doncella is consumed across the Peruvian Amazon and parts of Brazil. Outside of that, it does not exist on any international menu, in any market, in any format. This is not a niche product waiting to be discovered. It is a completely unknown ingredient in every market we serve.
Brazilian Doncella producers operate under domestic standards that do not satisfy US FDA, EU, or Canadian import requirements. The product cannot be legally shipped to the markets we serve. It is not a matter of price or availability — it is a compliance barrier that currently has no solution on the Brazilian side.
Peru has the regulatory framework, the certified production facilities, and the cold chain logistics required for international food safety compliance. Amazonian Reserve Peru is the only producer currently developing Doncella under the standards required to supply the United States, Canada, the Caribbean, and Europe.
Chefs and buyers who move early will have access to an ingredient their competitors simply cannot source. A product with genuine Amazonian identity, deep heritage in Peruvian culinary tradition, and zero market presence in North America, Europe, or the Caribbean. That window does not stay open indefinitely.

Doncella has been part of the diet and culture of Amazonian indigenous communities for generations. Found in the Ucayali and Maranon river systems of Peru, it is one of the most prized freshwater fish in the region, known locally as the river tuna for its firm, flavourful flesh and premium culinary potential.
The Slow Food Foundation has recognised Doncella in its Ark of Taste, a catalogue of food products that carry cultural and culinary significance and are at risk of disappearing due to overfishing and habitat pressure. Sourcing from a responsible, traceable supply chain is not just a commercial decision. It is the right one.
Atlantissea is developing a fully traceable, sustainable supply program for Doncella in partnership with producers in the Peruvian Amazon. Doncella is a large Amazonian catfish reaching over 1.3 metres and 20 kilograms at commercial harvest weight. Its flesh is white, succulent, and low in fat, with a fine grain and exceptional moisture retention during cooking. It has no intramuscular pin bones, a significant advantage for professional preparation and plate presentation.
The mild, clean flavour profile works equally well in delicate preparations such as ceviche and poaching, and in robust applications like grilling, smoking, and roasting. It accepts Asian, European, and Peruvian flavour frameworks without losing its own character.
